Spinach Egg Bake

I had to call mom to get this recipe.  I made this on Saturday morning and it seemed to be a hit with the boys.


Ingredients

  • 4 bunches green onions, finely chopped or 1/2 of a large onion
  • 1/4 cup butter
  • 1 pound fresh spinach, trimmed (I use 1 small box frozen, thawed and drained really dry)
    You can also make with broccoli instead of the spinach
  • 6 tablespoons minced fresh parsley
  • 12 eggs
  • 1/2 cup sour cream or 1 cup half & half cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1-1/2 cups (6 ounces) shredded cheddar cheese (sometimes I add some shredded Swiss if I have it)
  • 1/2 cup grated Parmesan cheese

Directions


  • In a large skillet, saute onions in butter for 2 minutes or until tender. Add spinach and parsley; saute 3 minutes longer or until heated through. Remove from the heat and set aside.
  • In a large bowl, beat the eggs, sour cream and salt until smooth. Stir in the spinach mixture and cheddar cheese. Pour into a greased 11x13 pan.
  • Sprinkle with Parmesan cheese.
  • Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted near the center comes out clean
