Guacamole and Tamales

Edit: This is an AWFUL picture! Chris said I must have had my Miller Lite goggles on! Either way, the avocados and tamales were still really good.

The avocados were fresh from Mexico and the tamales were made at a local tamaleria. Chris and I are not tamale lovers, but these were AWESOME.

The Saab is in the shop. This is my new ride.

The coolant bottle needs to be replaced. It should be done tomorrow. In the meantime, I get to drive around this hot minivan. The rental car guy kept talking it up telling me it was a 2010 about one hundred times.

Jamie Oliver's Food Revolution

We have been watching Jamie Oliver's Food Revolution on ABC. You may remember him from his Naked Chef fame. In the show he is essentially a one man intervention for Huntington, West Virginia, the most unhealthy city in the US.

I really like the show (Jamie Oliver just might be one of my new boyfriends) and while I was composing this I asked Chris if he thought this was our new favorite show to watch together. Chris said he didn't know, but he was mad at everyone in Huntington. A few minutes later, Chris went on to clarify that by everyone he really means the lunch lady and the radio guy.

March Madness

We filled out brackets this year and have been following the NCAA men's basketball tournament. Erica's bracket is shot because Kansas, the #1 team overall, lost last night to the University of Northern Iowa. She had Kansas winning the whole thing. Chris picked Kentucky as the champ, so there is still hope for him.

Driving Would Have Been Quicker

**update: We just got home. It is 1:30am. The flight was delayed one more time for good measure after the initial post. Good night!

I just got off the phone with Chris who has been at the Denver airport for the past 6 hours drinking beers because his flight is delayed. He boarded a plane around 9:30pm only to deplane because of electrical problems. Now he is sitting on a different plane waiting for luggage to transfer. He is pretty fired up. ETA 12:45am. He was supposed to get in at 7:50pm

Drunken Oreos

A couple weeks ago we tried out Meditrina, a small plates and wine bar in SLC. It was very good, especially the Drunken Oreos they served for dessert - red wine soaked Oreos served with vanilla bean ice cream and a port reduction sauce. Tonight we recreated it at home, substituting the port reduction for a chocolate red wine sauce.

Ingredients:
Oreos
Vanilla Bean Ice Cream
Red Wine of your choosing (we picked Pinot Noir)
Hot Fudge ice cream topping

Chocolate Wine Sauce:
Warm the hot fudge in a sauce pan. Add red wine to taste. Simmer on low heat until incorporated. The end product had a thin consistency. Cool to thicken.

Oreos:
Pour enough red wine into a shallow dish to cover the bottom. Place a few oreos into the wine dish to soak until they are just turning soft. Using a fork, flip each Oreo to soak both sides. You want soft, not soggy Oreos.

Serve 3-4 Oreos per person. Lay them in the bottom of a bowl or onto a plate (I recommend a bowl). Place a scoop of ice cream or two on top of the Oreos and drizzle with the chocolate wine sauce.

Voila! A super easy and fancy dessert that takes no time at all. New favorite!

Roasting Some Garlic Today

The apartment smells so good! Got the recipe from Eat Better America.

Ingredients:

2 garlic bulbs
4 teaspoons olive oil
Salt & Pepper to taste

makes 2 servings


Heat oven to 350°F. Carefully peel paperlike skin from around each bulb of garlic, leaving just enough to hold garlic cloves together. Cut 1/4 to 1/2 inch from top of each bulb to expose cloves. Place cut side up on 12-inch square of foil.


Drizzle each bulb with 2 teaspoons oil. Sprinkle with salt and pepper. Wrap securely in foil. Place in pie plate or shallow baking pan.


Bake 45 to 50 minutes or until garlic is tender when pierced with toothpick or fork. Cool slightly. To serve, gently squeeze soft garlic out of cloves. Stir into hot vegetables or spread on bread.

Our taxes are done!

We went to H&R Block and wouldn't recommend it - there was some sticker shock at the end, even with a discount. But, our tax preparer guy was good and we got a nice refund. Next year hopefully will be much simpler.

Erica Rocks the Blues

Erica has made huge improvements every time we have been out snowboarding. Today we spent most of the day on blue runs, many of which Erica wouldn't have even considered the last couple times we were out. Check out the video of Erica on Wall Street
