Pineapple Upside Down Pancakes

Erica was in Grand Junction this week on business.  These are the pancakes she ate this week at the Dream Cafe on historic Main Street.  They were awesome: caramelized pineapple, vanilla creme anglais, caramel and cinnamon butter.
